"Like the 2020 Colombard, the 2020 Carignan was picked nearly a month earlier than anticipated, both due to the hot growing season as well as the immediate pressure from the nearby Willits Fire. As a result, the 2020 Carignan was less ripe than the 2019 with lower sugars and higher acidity. Because one of the core values of Emme Wines is to produce wines that reflect the season, with as little intervention on the winemaking end as possible, the decision was made to ferment the Carignan as both a light carbonic red and a direct to press rose. This choice was made to reflect the high acid and delicate flavors of the freshly picked grapes.
To that end, when the Carignan arrived at the winery it was split into two parts. Half of the fruit was immediately pressed, and the juice was racked off of gross lees and then left to ferment in stainless steel. After it went dry, the rose was transferred to neutral oak to age for 5 months, sur lie.
The other half of the Carignan fruit was carefully placed whole cluster in an open bin, then covered with dry ice and sealed with plastic wrap to create an anaerobic environment for true carbonic maceration. It was left untouched for a week, then opened and immediately pressed without any foot crushing or skin contact. The resulting light red wine was left to ferment in stainless steel, then transferred to neutral oak to age for 5 months, sur lie.
A few days before bottling, the barrels of Carignan rosé and carbonic Carignan were blended together to create a light red wine. The tight acid of the rosé and the more intense flavors of the carbonic Carignan melded well together. The resulting wine is crisp and light, but with lots of fruit and surprising texture.
