"In 2020, I began working with Nakai Vineyard, owned and farmed by Aki Nakai.
Although planted mainly to Pinot and Chardonnay, Aki has a few small blocks of more
unusual varieties. One of these is Muscat Vert, of which he has only 3 rows. He
normally makes it into a wine under his own small label (which is sold only in Japan), but
in 2020 he decided not to produce it himself, and so was willing to sell the block to me.
I picked the Muscat early, aiming for high acid and slightly underdeveloped aromatics to
make a bright, textured skin contact white. The fruit was left on skins for 6 days, and
lightly foot tread once per day. At nearly dry, it was pressed to a stainless steel tank, and
left to finish primary fermentation. After primary, I transferred the wine to neutral oak
barriques, and let it go through malolactic fermentation in barrel. The Muscat sat through with winter in barrel sur lie, and was bottled in March of 2021.
Tasting Notes: Elderberry, tart meyer lemon rind with slight phenolic traction. Textured
maceration, savory, earthy."
